bienvenidas to week 8 of the couch culture club, this week we’re off to Mexico!

From palm-fringed beaches, zestful cuisine, teeming cities and fiesta festivals: Mexico is a celebration for the senses.

To create your Mexican fiesta this weeks selections are punchy, tangy and colourful. Cheers to the weekend with the Original Margarita created in Acapulco back in 1948, this iconic Mexican cocktail has stood the test of time and will take your taste buds to Mexico’s Pacific Coast. Accompanied by a-go-to dish for entertaining Chicken Fajitas you’ll be all set to settle in and watch the incredibly, colourful Coco. A sort of love letter to Mexico, Coco is a celebration of its music, culture and many unique traditions.

Chicken fajitas

Chicken Fajitas

INGREDIENTS

  • 400g chicken breast strips

  • 1 tbs sweet smoked paprika

  • 2 medium red onions

  • 1 red capsicum

  • 1 yellow capsicum

  • ½ a bunch of fresh coriander

  • a large handful of mixed-colour cherry tomatoes

  • 1 fresh red chilli

  • 2 ripe avocados

  • 1-2 limes

METHOD

Add the chicken strips to a bowl with a lug of olive oil, a pinch of salt and pepper and the paprika. Toss to coat, then leave to one side. Peel and finely slice the onions, de-seed and finely slice the capsicums and pick the coriander leaves, discarding the stalks.

Place a large frying pan on a high heat, add a splash of olive oil, the onion and capsicums and cook for around 5 minutes, or until slightly softened. Add the chicken and cook for a further 5 to 10 minutes or until golden and cooked through, stirring occasionally.

Meanwhile, make the guacamole. Halve and de-stone the avocados, then squeeze the flesh into a bowl. Squeeze over the juice of 1 to 2 limes. Roughly chop the cherry tomatoes. De-seed and finely chop the chilli, then finely chop a handful of the coriander leaves. Add the tomatoes, chilli and corinader to the bowl and mash everything together. Season to taste, adding a squeeze more of lime juice if you think it needs it.

Once the chicken is golden and cooked through, season to taste. Serve with guacamole mixture and warmed corn tortillas or rice and beans if you prefer.

 
 
Margarita

THE ORIGINAL MARGARITA

The Original Margarita was created when Dallas socialite Margarita Sames mixed her two favourite spirits, Cointreau and tequila, together with lime juice while on vacation in Acapulco back in 1948. This original recipe has stood the test of over 70 years’ time.

To make this iconic drink simply;

Combine 30ml Cointreau, 50ml Tequila and 20ml fresh lime juice in a cocktail shaker with ice. Shake until well-chilled.
Strain into a salt rimmed glass and garnish with lime slice.
