Transport yourself to our Pacific neighbours from home with this weeks all-out Philippines Couch Culture Club. Prepare the national dish of the Philippines, Adobo. Best described as a flavour kapow! It’s soon to be your new favourite Asian chicken dish. Pair with a Manila Sunshine, a cocktail  concocted by the Department of Tourism. This is the signature drink of the Philippines. Cap the night off by immersing yourself in a Filipino drama, Sid and Aya, not a love story.

Filipino Adobo

Filipino Adobo

INGREDIENTS

  • 750g chicken thigh fillets

  • 6 garlic cloves, minced

  • 1/3 cup soy sauce

  • 1/3 cup white vinegar

  • 4 bay leaves

  • 1 small brown onion, diced

  • 1  ½ cups water

  • 2 tbsp brown sugar

  • 2 tbsp cracked pepper

  • 2 shallots

METHOD

In a large bowl combine chicken, 3 minced garlic cloves, soy sauce, white vinegar and bay leaves. Marinate for at least 20 minutes, or up to overnight.

In a large skillet heat 1 tbsp oil and sear marinated chicken on both sides until browned, around 1 minute each side. Remove chicken skillet and set aside.

Heat another tbsp of oil in the skillet and add 3 minced garlic cloves and onion. Cook 1 minutes. Add the reserved marinade, water, sugar and black pepper. Bring it to a simmer then turn heat down to medium high. Simmer 5 minutes.

Add chicken and simmer uncovered for 20 to 25 minutes, until the sauce reduces to a thick jam-like syrup. Coat chicken in glaze then serve over rice with shallots. Video recipe found here

 
 
Manila sunshine

Manila Sunshine

Described as “distinctly Filipino,” Manila Sunshine is a refreshing, fruity cocktail which will transport your taste buds to the bay-side Filipino capital.

What you’ll need

  • 1 shot Coconut liqueur

  • 1 shot Dark rum

  • ½ shot Triple sec

  • 60ml mango nectar

  • 60ml pineapple juice

  • 60ml orange juice

  • Garnish with pineapple and lemongrass

How to make it

Combine all the ingredients into a cocktail shaker with a handful of ice and shake vigorously. Strain into a tall glass and garnish with pineapple and lemongrass.
