Famous for cheerful locals, active volcanoes, untouched rain forests and lush tropical beaches this weeks Couch Culture Club is Vanuatu.

Cure those winter blues with a splash of South Pacific culture and create the perfect Vanuatu-an night in. Create the national dish, lap lap and pair it with a tropical cocktail. Afterwards sit down and watch an extraordinary true love story depicted in the film Tanna, the first film to be shot entirely on location in Vanuatu.

Royal Vanutau

Royal Vanuatu

You’ll need;

  • 230 ml Pineapple Juice

  • 2 shots Gin

  • 1 shot Frangelico

  • Juice of 2 Limes

  • Sparkling water

Combine all ingredients except sparkling water into a cocktail shaker. Fill the shaker with ice and shake vigorously! Evenly divide cocktail between two tumblers (or coconuts for extra flair) filled with ice and top with sparkling water.

Lap Lap

INGREDIENTS

  • 1 cup grated sweet potato

  • 1 cup grated pumpkin

  • 2 tbsp coconut cream

  • 2 tsp curry powder

  • 200g pork mince

  • 1 spring onion, finely sliced

  • 1 cup chopped silverbeet or spinach

  • 2 tsp soy sauce

  • 2 banana leaves or baking paper

METHOD

Pre-heat oven to 200°C. Then in a large bowl mix together all of the ingredients except for the banana leaves (or baking paper).

Divide the mixture between two 25cm square banana leaves or pieces of baking paper and fold into an enclosed parcel.

Place parcels on a baking tray or roasting dish and bake for 30 minutes Remove from oven and served wrapped. See a video tutorial here.

Set on a remote Pacific island, covered in rain forest and dominated by an active volcano, this heartfelt story, enacted by the Yakel tribe, tells of a sister's loyalty, a forbidden love affair and the pact between the old ways and the new.
