Enjoy a sensation of the senses with our Indian selections starting with an adult-only take on the iconic mango lassi followed by a go-to authentic curry the chicken madras, top your night off by watching the highly regarded biographical drama, Lion.

Mango Lassi Cocktail

Spiked mango lassi

An upgraded version of the much loved Indian mango lassi, cool down your tastebuds after your hot chilli with this frozen cocktail.

You’ll need;

  • 3 cups frozen mango

  • 1 cup full fat coconut milk

  • 2 tbsp fresh lime juice

  • 1 tbsp fresh lemon juice

  • 1 tsp turmeric powder

  • 2 shots spiced rum

Blitz the ingredients in a blender until smooth.
Serve the slushie in a glass and garnish with fruit.

 
 
Madras Curry

INGREDIENTS

  • 1 diced onion

  • 2 minces garlic cloves

  • 2 tsp minced ginger

  • 3 large chicken breasts

  • ½ tsp ground cinnamon

  • 3 tbsp madras hot curry powder

  • 1 ½ tsp paprika

  • ¼ tsp ground fenugreek

  • 2 ½ tsp tamarind paste

  • 400ml passata

  • 2 tbsp tomato paste

  • 200ml coconut milk

METHOD

Add the onion, garlic and ginger to a mini food processor and blend to a paste. Add a splash of oil to loosen if needed.

Heat 3tbs of oil in a large frying pan over a high heat. Add the onion mixture and fry for 3-4 minutes, stirring occasionally, until starting to brown at the edges. Add the chicken and cook for 2-3 minutes, stirring often, until sealed.

Turn the heat down to medium and add the cinnamon, madras curry powder, paprika, ground fenugreek, tamarind paste, then salt and pepper to taste.

Cook for 1 minute, stirring constantly. Add in the passata and tomato puree and bring to the boil. Add the coconut milk. Stir and bring to the boil, then simmer for 10 minutes. Serve with fresh coriander, sliced chillies, red onion and boiled rice. See the video tutorial here.

This weeks film is the 2016 biographical drama film, Lion. The film follows the story of a 5-year old Indian boy lost on the streets of Calcutta, thousands of kilometres from home. He survives many challenges before being adopted by a couple in Australia. 25 years later, he sets out to find his lost family. You can watch it for free on SBS on Demand by Clicking Here
