Fill your home with incredible aromas and transport your taste buds to Thailand with this weeks selections. Starting with a signature dish of Bangkok street vendors, the iconic Pad Thai. This is an easy and delicious noodle dish to quickly whip up. Chase it down with a flavourful Thai cocktail - the Siam Sunray, known as a taste of ‘Thailand in a glass’. To really immerse yourself in this Thai evening watch ‘Buoyancy’ on SBS on Demand, a film inspired by the real-life plight of workers sold into Southeast Asia’s fishing industry. Chicken Pad Thai

INGREDIENTS

  • 250g dried rice noodles

  • ¼ cup caster sugar

  • ¼ cup tamarind liquid

  • ¼ cup fish sauce

  • 1 tablespoon oil

  • 2 shallots, chopped

  • 2 cloves garlic, chopped

  • 250g chicken breast fillet, sliced

  • 2 eggs, beaten

  • 50g firm tofu, diced

  • 1 pinch chilli powder

  • 2 tablespoons chopped chives

  • ¼ cup toasted peanuts, finely chopped

  • 2 cups bean sprouts

METHOD

 Soak noodles in hot water in a bowl until soft, strain and sit aside.
Combine sugar, tamarind and fish sauce in another small bowl, mix well and sit aside.

Heat oil in a wok or large frying pan, add shallots and garlic and fry until lightly browned.
Add chicken and fry until cooked. Push ingredients to one side and add eggs.

Stir until cooked then add tofu, chilli powder, chives, noodles and sauce.

Continue to stir fry for 2-3 minutes until all ingredients are well combined and heated through.
Serve noodles topped with peanuts and bean sprouts with a wedge of lime.

Siam Sunray

ingredients

  • ½ Thai chili pepper

  • 3 thin slices of ginger

  • 1 Kaffir lime leaf

  • 3 thin slivers of lemongrass

  • 15ml sugar syrup

  • 3 drops lime juice
    40ml vodka

  • 30ml coconut liqueur (or coconut-flavored Bacardi)

  • A splash of soda water

  • chili pepper, to garnish

  • lime wedge, to garnish 

Method

Crush the chili, ginger, lime leaf and lemongrass together in a shaker. Add the sugar syrup, lime juice, vodka and coconut liqueur and shake. Once shaken, strain into a long glass over ice, top up with soda water, and garnish with a fresh chili pepper and lime.

Bingo, tom yam in a glass!
