This week’s Couch Culture Club is just tickety-boo! We’re headed to England.

We’re chuffed to bits that you’ve joined us for week 4 of the Couch Culture Club, we’re gobsmacked it’s been a month already! We think we’ve picked a bloody brilliant destination this week, home to the Queen herself, England.

Create a smashing British night at home by cooking up a classic cottage pie, paired with a very British original Pimm’s No.1 and watching the grungy, 80’s skinheads of This Is England.

Cottage Pie

INGREDIENTS

  • 1.5kg beef mince

  • 2 onions, finely chopped

  • 3 carrots, chopped

  • 3 celery sticks, chopped

  • 2 garlic cloves, finely chopped

  • 3 tbsp plain flour

  • 1 tbsp tomato purée

  • Large glass red wine (optional)

  • 850ml beef stock

  • 4 tbsp Worcestershire sauce

    For the mash

  • 1.8kg potatoes, peeled and chopped

  • 225ml milk

  • 25g butter

  • 200g strong cheddar

METHOD

Pre-heat oven to 200C fan.

Heat 1 tbsp olive oil in a large saucepan and cook beef mince until browned. Add 2 tbsp olive oil into the pan, add onions, carrots and celery and cook on a gentle heat until soft, about 20 mins.

Add garlic cloves, 3 tbsp plain flour and 1 tbsp tomato purée, increase the heat and cook for a few mins. Pour over a large glass of red wine, if using, and boil to reduce it slightly before adding the 850ml beef stock and 4 tbsp Worcestershire sauce.Bring to a simmer and cook, uncovered, for 45 mins.

Meanwhile, make the mash. In a large saucepan, boil the potatoes until tender. Drain well, then mash with the milk, butter, and cheddar cheese.

Spoon the meat into ovenproof dish and cover with mash. Sprinkle cheese on top. Place into pre-heated oven and cook for 25-30 mins, or until the topping is golden.

  • Fill a highball glass fwith ice

  • Add 50ml PIMM'S No.1

  • Top with 150ml lemonade

  • Add strawberry, orange & cucumber

  • Finish with a sprig of mint
